Served with tea or coffee, these aril-topped cookies are a real talking point.

Ingredients
- 3 cups Royal POM™ pomegranate arils
- 3 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 1/2 cup margarine
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 1 egg
- 1/4 cup milk
- 2 tbsp lemon juice
Preparation Instructions
- Preheat oven to 190C.
- Measure flour, baking powder, baking powder and salt into a bowl. Stir with a fork to mix.
- Cream butter and sugars in a large bowl until fluffy. Beat in egg, milk and lemon juice.
- Stir in flour mixture, a little at a time, until well blended. Stir in pomegranate arils.
- Drop dough by the teaspoonful, about 2.5cm apart, onto greased cookie sheets, or use cookie cutters to make different shapes.
- Bake 15 minutes, or until firm and golden. Cool on racks.
