Served with tea or coffee, these aril-topped cookies are a real talking point.

Serves 4.

Ingredients

  • 3 cups Royal POM™ pomegranate arils
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup margarine
  • 1 cup granulated sugar
  • 1 cup firmly packed brown sugar
  • 1 egg
  • 1/4 cup milk
  • 2 tbsp lemon juice

Preparation Instructions

  • Preheat oven to 190C.
  • Measure flour, baking powder, baking powder and salt into a bowl. Stir with a fork to mix.
  • Cream butter and sugars in a large bowl until fluffy. Beat in egg, milk and lemon juice.
  • Stir in flour mixture, a little at a time, until well blended. Stir in pomegranate arils.
  • Drop dough by the teaspoonful, about 2.5cm apart, onto greased cookie sheets, or use cookie cutters to make different shapes.
  • Bake 15 minutes, or until firm and golden. Cool on racks.
